  • 1/2 cup white miso paste
  • 1/4 cup sake
  • 1/4 cup mirin
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 green onion, thinly sliced (for garnish)
  • Cooked rice (for serving)

Instructions

  1. In a mixing bowl, whisk together the white miso paste, sake, mirin, brown sugar, soy sauce, and sesame oil until smooth.
  2. Place the black cod fillets in a shallow dish or a resealable plastic bag. Pour the miso marinade over the fish, ensuring all fillets are well-coated. Cover or seal and refrigerate for at least 24 hours, up to 48 hours for deeper flavor.
  3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. Remove the black cod from the marinade, gently wiping off excess marinade with a paper towel. Place the fillets skin-side down on the prepared baking sheet.
  5. Bake in the preheated oven for 10-12 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Serve the miso-glazed black cod over cooked rice, garnished with sliced green onions.
