- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup sour cream
- 1 teaspoon peppermint extract
- 1 cup semi-sweet chocolate chips
- ¼ cup heavy cream
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the granulated sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing on low speed after each addition until just incorporated.
- Stir in the sour cream and peppermint extract until smooth.
- In a small saucepan, heat the heavy cream over low heat until warm. Remove from heat and add the chocolate chips, stirring until melted and smooth. Allow to cool slightly.
- Fold the melted chocolate mixture into the cream cheese mixture until fully combined.
- Pour the cheesecake batter over the crust in the springform pan, smoothing the top with a spatula.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
- Before serving, garnish with fresh mint leaves if desired.
Notes
- For a more intense mint flavor, add a few drops of green food coloring and additional peppermint extract to the batter.
- Swap out the chocolate cookie crust for a graham cracker crust for a different flavor profile.
