Ingredients

  • ½ cup unsalted butter, melted

  • 1 cup granulated sugar

  • ½ cup sour cream
  • 1 teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips
  • ¼ cup heavy cream
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  4. Gradually add the granulated sugar and vanilla extract, mixing until well combined.
  5. Add the eggs one at a time, mixing on low speed after each addition until just incorporated.
  6. Stir in the sour cream and peppermint extract until smooth.
  7. In a small saucepan, heat the heavy cream over low heat until warm. Remove from heat and add the chocolate chips, stirring until melted and smooth. Allow to cool slightly.
  8. Fold the melted chocolate mixture into the cream cheese mixture until fully combined.
  9. Pour the cheesecake batter over the crust in the springform pan, smoothing the top with a spatula.
  10. Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
  11. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
  12. Before serving, garnish with fresh mint leaves if desired.

Notes

  • For a more intense mint flavor, add a few drops of green food coloring and additional peppermint extract to the batter.
