- 1 pound ground turkey
- 1 cup breadcrumbs
- 1/2 cup finely chopped onion
- 1/2 cup shredded carrots
- 1/4 cup BBQ sauce (plus extra for topping)
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine the ground turkey, breadcrumbs, chopped onion, shredded carrots, BBQ sauce, egg, garlic powder, salt, black pepper, smoked paprika, and cayenne pepper (if using). Mix until just combined, being careful not to overmix.
- Divide the mixture into 6 equal portions and shape each portion into a small loaf.
- Place the mini meatloaves on a baking sheet lined with parchment paper.
- Brush the tops with additional BBQ sauce.
- Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F.
- Let the meatloaves rest for 5 minutes before serving.
Notes
- For a twist, try adding 1/4 cup of chopped bell peppers or 1/4 cup of shredded cheese to the mixture before baking.
- To make it gluten-free, substitute breadcrumbs with crushed gluten-free crackers or oats.
