Mini Banana Bread Loaves are a quick and easy treat made with ripe bananas, perfect for breakfast or a snack.

- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 cup all-purpose flour
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini loaf pan or line it with parchment paper.
- In a mixing bowl, combine the mashed bananas and melted butter. Stir until well mixed.
- Add the sugar, beaten egg, and vanilla extract to the banana mixture. Mix until smooth.
- Sprinkle the baking soda and salt over the mixture and stir to combine.
- Gently fold in the flour until just incorporated. If using, add the chopped walnuts or chocolate chips.
- Divide the batter evenly among the mini loaf compartments, filling each about 2/3 full.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the mini loaves to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
Notes
- For a spicier flavor, add 1/2 teaspoon of cinnamon or nutmeg to the batter.
- Substitute half of the all-purpose flour with whole wheat flour for a healthier option.
