Ingredients

  • 1/3 cup melted butter
  • 1/2 cup granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup all-purpose flour
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini loaf pan or line it with parchment paper.
  2. In a mixing bowl, combine the mashed bananas and melted butter. Stir until well mixed.
  3. Add the sugar, beaten egg, and vanilla extract to the banana mixture. Mix until smooth.
  4. Sprinkle the baking soda and salt over the mixture and stir to combine.
  5. Gently fold in the flour until just incorporated. If using, add the chopped walnuts or chocolate chips.
  6. Divide the batter evenly among the mini loaf compartments, filling each about 2/3 full.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the mini loaves to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a spicier flavor, add 1/2 teaspoon of cinnamon or nutmeg to the batter.
  • Substitute half of the all-purpose flour with whole wheat flour for a healthier option.
