Delicious and festive Mickey Mouse Santa Hat Cupcakes perfect for holiday celebrations.

- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- ½ cup whole milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ cup boiling water
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 teaspoons vanilla extract
- 2–3 tablespoons heavy cream or milk
- Red food coloring
- Mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Add the egg, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
- Stir in the boiling water until well combined. The batter will be thin.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well.
- Add the vanilla extract and 2 tablespoons of heavy cream or milk. Beat until fluffy. If the frosting is too thick, add more cream or milk, one tablespoon at a time.
- Divide the frosting into two bowls. Tint one bowl with red food coloring to achieve a bright red shade.
- Frost the tops of the cooled cupcakes with the white frosting, creating a dome shape. Use the red frosting to pipe a ring around the base of the white frosting to resemble a Santa hat.
- Top each cupcake with a mini marshmallow to represent the pom-pom on the Santa hat.
Notes
- For a chocolate version, use chocolate cake mix instead of homemade batter.
- Add festive sprinkles on top of the frosting for extra holiday cheer.
