Delicious and festive Mickey Mouse Santa Hat Cupcakes perfect for holiday celebrations.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup whole milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup boiling water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 23 tablespoons heavy cream or milk
  • Red food coloring
  • Mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the egg, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Stir in the boiling water until well combined. The batter will be thin.
  5. Pour the batter into the prepared cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  7. While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well.
  8. Add the vanilla extract and 2 tablespoons of heavy cream or milk. Beat until fluffy. If the frosting is too thick, add more cream or milk, one tablespoon at a time.
  9. Divide the frosting into two bowls. Tint one bowl with red food coloring to achieve a bright red shade.
  10. Frost the tops of the cooled cupcakes with the white frosting, creating a dome shape. Use the red frosting to pipe a ring around the base of the white frosting to resemble a Santa hat.
  11. Top each cupcake with a mini marshmallow to represent the pom-pom on the Santa hat.

Notes

  • For a chocolate version, use chocolate cake mix instead of homemade batter.
