- 1 teaspoon paprika

- 1 cup salsa (mild or spicy, based on preference)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro (optional)
- Lime wedges for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
- Rub the spice mixture evenly over the chicken breasts.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side until golden brown.
- Pour the salsa over the chicken, ensuring it is evenly coated.
- Sprinkle the shredded cheddar and Monterey Jack cheese over the top of the chicken and salsa.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F).
- Remove from the oven and let it rest for 5 minutes. Garnish with chopped cilantro if desired and serve with lime wedges.
Notes
- For added flavor, marinate the chicken in the spice mixture and salsa for a few hours or overnight before cooking.
- Substitute the cheeses with pepper jack for a spicier kick or use a dairy-free cheese for a lactose-free option.
