Description

A flavorful Mexican dish featuring tender chicken breasts topped with salsa and a blend of cheeses.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup salsa (mild or spicy, based on preference)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
  3. Rub the spice mixture evenly over the chicken breasts.
  4. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side until golden brown.
  5. Pour the salsa over the chicken, ensuring it is evenly coated.
  6. Sprinkle the shredded cheddar and Monterey Jack cheese over the top of the chicken and salsa.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  8. Remove from the oven and let it rest for 5 minutes. Garnish with chopped cilantro if desired and serve with lime wedges.

Notes

  • For added flavor, marinate the chicken in the spice mixture and salsa for a few hours or overnight before cooking.
  • Substitute the cheeses with pepper jack for a spicier kick or use a dairy-free cheese for a lactose-free option.
