Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Sear the chicken in the skillet for about 5 minutes on each side, until golden brown.
  4. Transfer the chicken to a baking dish and pour the salsa over the top.
  5. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Remove the dish from the oven and sprinkle the cheddar and Monterey Jack cheeses evenly over the chicken.
  7. Return to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes. Drizzle with sour cream and garnish with chopped cilantro if desired.

Notes

  • For a spicier version, add diced jalapeños or a splash of hot sauce to the salsa before baking.
  • Serve with warm tortillas or over a bed of rice for a complete meal.
