- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Sear the chicken in the skillet for about 5 minutes on each side, until golden brown.
- Transfer the chicken to a baking dish and pour the salsa over the top.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove the dish from the oven and sprinkle the cheddar and Monterey Jack cheeses evenly over the chicken.
- Return to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Drizzle with sour cream and garnish with chopped cilantro if desired.
Notes
- For a spicier version, add diced jalapeños or a splash of hot sauce to the salsa before baking.
- Serve with warm tortillas or over a bed of rice for a complete meal.
