Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
- Divide the batter evenly into five small bowls. Add a few drops of each food coloring to each bowl, mixing until you achieve vibrant colors.
- Spoon the colored batters into the cupcake liners, layering them to create a rainbow effect. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- In a medium bowl, combine the powdered sugar, cocoa powder, and milk to make the frosting. Mix until smooth and creamy.
- Frost the cooled cupcakes with the chocolate frosting and top with festive sprinkles.
Notes
- For a fun twist, try adding a teaspoon of peppermint extract to the frosting for a minty flavor.
