Description

Delightful and colorful Merry & Bright Rainbow Christmas Cupcakes that bring joy to your holiday celebrations.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • Food coloring (red, green, yellow, blue, purple)
  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons milk (for frosting)
  • Sprinkles (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  5. Divide the batter evenly into five small bowls. Add a few drops of each food coloring to each bowl, mixing until you achieve vibrant colors.
  6. Spoon the colored batters into the cupcake liners, layering them to create a rainbow effect. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. In a medium bowl, combine the powdered sugar, cocoa powder, and milk to make the frosting. Mix until smooth and creamy.
  9. Frost the cooled cupcakes with the chocolate frosting and top with festive sprinkles.

Notes

  • For a fun twist, try adding a teaspoon of peppermint extract to the frosting for a minty flavor.
  • You can also substitute the chocolate frosting with vanilla frosting and add red and green sprinkles for a festive look.
