Description

A delicious Mediterranean twist on the classic grilled cheese sandwich, featuring feta and mozzarella cheeses, roasted red peppers, and fresh spinach.


Ingredients

  • 2 slices of whole grain bread
  • 2 ounces of feta cheese, crumbled
  • 2 ounces of mozzarella cheese, shredded
  • 1/4 cup of roasted red peppers, sliced
  • 1/4 cup of fresh spinach leaves
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat a skillet over medium heat.
  2. In a small bowl, mix the feta cheese, mozzarella cheese, roasted red peppers, spinach, oregano, salt, and pepper until well combined.
  3. Spread half of the olive oil on one side of each slice of bread.
  4. Place one slice of bread, oil side down, in the skillet.
  5. Spoon the cheese and vegetable mixture onto the bread in the skillet, spreading it evenly.
  6. Top with the second slice of bread, oil side up.
  7. Cook for about 3-4 minutes, or until the bottom slice is golden brown.
  8. Carefully flip the sandwich and cook for another 3-4 minutes, until the other side is golden brown and the cheese is melted.
  9. Remove from the skillet and let it cool for a minute before slicing in half.

  • For added flavor, try incorporating sun-dried tomatoes or olives into the cheese mixture.
  • For a spicy kick, add a few slices of jalapeños or a sprinkle of red pepper flakes.
