Description
A delicious Mediterranean twist on the classic grilled cheese sandwich, featuring feta and mozzarella cheeses, roasted red peppers, and fresh spinach.
Ingredients

- 2 slices of whole grain bread
- 2 ounces of feta cheese, crumbled
- 2 ounces of mozzarella cheese, shredded
- 1/4 cup of roasted red peppers, sliced
- 1/4 cup of fresh spinach leaves
- 1 tablespoon of olive oil
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- Preheat a skillet over medium heat.
- In a small bowl, mix the feta cheese, mozzarella cheese, roasted red peppers, spinach, oregano, salt, and pepper until well combined.
- Spread half of the olive oil on one side of each slice of bread.
- Place one slice of bread, oil side down, in the skillet.
- Spoon the cheese and vegetable mixture onto the bread in the skillet, spreading it evenly.
- Top with the second slice of bread, oil side up.
- Cook for about 3-4 minutes, or until the bottom slice is golden brown.
- Carefully flip the sandwich and cook for another 3-4 minutes, until the other side is golden brown and the cheese is melted.
- Remove from the skillet and let it cool for a minute before slicing in half.
Notes
- For added flavor, try incorporating sun-dried tomatoes or olives into the cheese mixture.
- For a spicy kick, add a few slices of jalapeños or a sprinkle of red pepper flakes.
