Ingredients

  • 1 pound breakfast sausage
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup sliced green onions (for garnish)
  • Tortilla chips (for serving)

Instructions

  1. In a large skillet over medium heat, cook the ground beef and breakfast sausage until browned and fully cooked, about 8-10 minutes. Drain any excess fat.
  2. Stir in the black beans, pinto beans, diced tomatoes with green chilies, cream cheese, sour cream, taco seasoning, garlic powder, onion powder, salt, and black pepper. Mix well until the cream cheese is fully melted and incorporated.
  3. Reduce the heat to low and stir in half of the cheddar cheese and half of the Monterey Jack cheese until melted and smooth.
  4. Transfer the mixture to a baking dish and top with the remaining cheddar and Monterey Jack cheese.
  5. Bake in a preheated oven at 350°F for 20-25 minutes, or until the cheese is bubbly and golden.
  6. Remove from the oven and let cool for a few minutes. Garnish with sliced green onions before serving.
  7. Serve warm with tortilla chips for dipping.
