  • 1 tablespoon all-purpose flour
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, ketchup, onion, egg, Worcestershire sauce, garlic powder, salt, pepper, and thyme. Mix until well combined.
  3. Transfer the meat mixture to a loaf pan, shaping it into a loaf.
  4. Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F.
  5. While the meatloaf is baking, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté until they are golden brown, about 5-7 minutes.
  6. In a small bowl, whisk together the beef broth, soy sauce, and flour until smooth. Pour this mixture into the skillet with the mushrooms and bring to a simmer.
  7. Cook for 5-10 minutes, stirring occasionally, until the gravy thickens.
  8. Once the meatloaf is done, let it rest for 10 minutes before slicing.
  9. Serve slices of meatloaf topped with mushroom gravy and garnish with fresh parsley.
