Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine the ground beef, breadcrumbs, milk, ketchup, onion, egg, Worcestershire sauce, garlic powder, salt, pepper, and thyme. Mix until well combined.
- Transfer the meat mixture to a loaf pan, shaping it into a loaf.
- Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F.
- While the meatloaf is baking, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté until they are golden brown, about 5-7 minutes.
- In a small bowl, whisk together the beef broth, soy sauce, and flour until smooth. Pour this mixture into the skillet with the mushrooms and bring to a simmer.
- Cook for 5-10 minutes, stirring occasionally, until the gravy thickens.
- Once the meatloaf is done, let it rest for 10 minutes before slicing.
- Serve slices of meatloaf topped with mushroom gravy and garnish with fresh parsley.

- For a healthier version, substitute ground turkey for ground beef.
