Description

A delicious Marinated Salumi Sandwich featuring layers of cured meats, cheese, and roasted red peppers, all marinated for enhanced flavor.


Ingredients

  • 1 loaf of ciabatta bread (about 12 inches)
  • 4 ounces of salami, thinly sliced
  • 4 ounces of capicola, thinly sliced
  • 4 ounces of mortadella, thinly sliced
  • 4 ounces of provolone cheese, sliced
  • 1/2 cup of roasted red peppers, sliced
  • 1/4 cup of fresh basil leaves
  • 1/4 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper to create the marinade.
  2. Slice the ciabatta bread in half lengthwise and drizzle a little of the marinade on both cut sides.
  3. Layer the salami, capicola, mortadella, and provolone cheese evenly on the bottom half of the ciabatta.
  4. Add the roasted red peppers and fresh basil leaves on top of the cheese.
  5. Drizzle more of the marinade over the toppings, then place the top half of the ciabatta on the sandwich.
  6. Wrap the sandwich tightly in plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
  7. Before serving, slice the sandwich into individual portions and serve chilled or at room temperature.

Notes

  • For a spicy kick, add sliced jalapeños or a spread of spicy mustard to the sandwich.
