- 2 cups Brussels sprouts, halved
- 2 cups carrots, sliced
- 2 cups sweet potatoes, cubed
- 1 red onion, cut into wedges
- 3 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme (dried or fresh)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the Brussels sprouts, carrots, sweet potatoes, and red onion.
- In a separate small bowl, whisk together the olive oil, maple syrup, Dijon mustard, garlic powder, salt, black pepper, and thyme.
- Pour the maple Dijon mixture over the vegetables and toss until they are evenly coated.
- Spread the vegetables in a single layer on a large baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and caramelized.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the maple Dijon mixture.
- Feel free to substitute any seasonal vegetables you have on hand, such as zucchini or bell peppers, for a different flavor profile.
