Ingredients

Scale
  • 2 cups Brussels sprouts, halved
  • 2 cups carrots, sliced
  • 2 cups sweet potatoes, cubed
  • 1 red onion, cut into wedges
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme (dried or fresh)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the Brussels sprouts, carrots, sweet potatoes, and red onion.
  3. In a separate small bowl, whisk together the olive oil, maple syrup, Dijon mustard, garlic powder, salt, black pepper, and thyme.
  4. Pour the maple Dijon mixture over the vegetables and toss until they are evenly coated.
  5. Spread the vegetables in a single layer on a large baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and caramelized.
  7. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the maple Dijon mixture.
  • Feel free to substitute any seasonal vegetables you have on hand, such as zucchini or bell peppers, for a different flavor profile.
