- 2 cups cooked ground turkey
- 8 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers (any color)
- 1 cup diced onions
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 tablespoon olive oil
- 1 cup diced tomatoes (fresh or canned, drained)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
- In a large skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, and sauté for about 5 minutes until softened.
- In a large bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, paprika, and cayenne pepper (if using).
- Stir in the cooked ground turkey, sautéed vegetables, shredded cheddar cheese, and diced tomatoes into the egg mixture until well combined.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the top is lightly golden.
- Allow the casserole to cool for about 10 minutes before slicing. Garnish with fresh parsley if desired.
Notes
- For a vegetarian version, substitute the ground turkey with cooked black beans or sautéed mushrooms.
- Add your favorite spices or herbs, such as oregano or basil, to customize the flavor profile.
