- ½ cup unsalted butter, softened

- 1 large egg

- ½ cup colorful sprinkles (jimmies or nonpareils)
- ½ cup cocoa powder
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Add the egg, vanilla extract, and almond extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Divide the dough in half. To one half, add the cocoa powder and mix until fully incorporated.
- Lay out a large piece of parchment paper. Place the vanilla dough on one side and the chocolate dough on the other. Roll each half into a rectangle, about ¼ inch thick.
- Carefully lift the chocolate dough and place it on top of the vanilla dough. Using the parchment paper, roll the dough tightly into a log. Wrap the log in the parchment paper and refrigerate for at least 1 hour or until firm.
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Remove the dough from the refrigerator and slice it into ¼-inch thick rounds. Place the rounds on the prepared baking sheet, spacing them about 2 inches apart. Sprinkle colorful sprinkles on top of each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
