Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Add the egg, vanilla extract, and almond extract, mixing until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Divide the dough in half. To one half, add the cocoa powder and mix until fully incorporated.
  4. Lay out a large piece of parchment paper. Place the vanilla dough on one side and the chocolate dough on the other. Roll each half into a rectangle, about ¼ inch thick.
  5. Carefully lift the chocolate dough and place it on top of the vanilla dough. Using the parchment paper, roll the dough tightly into a log. Wrap the log in the parchment paper and refrigerate for at least 1 hour or until firm.
  6. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  7. Remove the dough from the refrigerator and slice it into ¼-inch thick rounds. Place the rounds on the prepared baking sheet, spacing them about 2 inches apart. Sprinkle colorful sprinkles on top of each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
