A comforting and delicious Mac and Cheese Meatloaf Casserole that combines the classic flavors of mac and cheese with a hearty meatloaf.

- 2 cups elbow macaroni
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 cup breadcrumbs
- 1 large egg
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1 cup marinara sauce
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
- Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- In a large bowl, combine the ground beef, sautéed onion and garlic, salt, black pepper, Italian seasoning, breadcrumbs, and egg. Mix until well combined.
- In a separate bowl, mix together the cooked macaroni, shredded cheddar cheese, and milk. Stir until the cheese is melted and the mixture is creamy.
- Spread half of the macaroni and cheese mixture evenly in the bottom of the prepared baking dish.
- Form the meat mixture into a loaf shape and place it on top of the macaroni layer in the baking dish.
- Spread the remaining macaroni and cheese mixture over the meatloaf. Pour the marinara sauce evenly on top, then sprinkle with grated Parmesan cheese.
- Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and the top is golden and bubbly.
- Let the casserole cool for 10 minutes before slicing and serving.
Notes
- For a spicier kick, add 1/2 teaspoon of red pepper flakes to the meat mixture.
- Substitute ground turkey or chicken for a leaner option, and use low-fat cheese to reduce calories.
