A comforting and delicious Mac and Cheese Meatloaf Casserole that combines the classic flavors of mac and cheese with a hearty meatloaf.


Ingredients

  • 2 cups elbow macaroni
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  4. In a large bowl, combine the ground beef, sautéed onion and garlic, salt, black pepper, Italian seasoning, breadcrumbs, and egg. Mix until well combined.
  5. In a separate bowl, mix together the cooked macaroni, shredded cheddar cheese, and milk. Stir until the cheese is melted and the mixture is creamy.
  6. Spread half of the macaroni and cheese mixture evenly in the bottom of the prepared baking dish.
  7. Form the meat mixture into a loaf shape and place it on top of the macaroni layer in the baking dish.
  8. Spread the remaining macaroni and cheese mixture over the meatloaf. Pour the marinara sauce evenly on top, then sprinkle with grated Parmesan cheese.
  9. Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and the top is golden and bubbly.
  10. Let the casserole cool for 10 minutes before slicing and serving.

Notes

  • For a spicier kick, add 1/2 teaspoon of red pepper flakes to the meat mixture.
  • Substitute ground turkey or chicken for a leaner option, and use low-fat cheese to reduce calories.
