Description

Lobster Thermidor is a classic French dish featuring lobster meat cooked in a creamy sauce, then baked in the lobster shells with a topping of melted cheese.


Ingredients

  • 2 live lobsters (about 1.5 pounds each)
  • 4 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, finely chopped
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Bring a large pot of salted water to a boil. Add the lobsters and cook for 8-10 minutes until bright red. Remove and let cool. Once cool, remove the meat from the tails and claws, chop into bite-sized pieces, and set aside. Reserve the shells.
  2. In a skillet, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 3-4 minutes.
  3. Add the chopped mushrooms to the skillet and cook until they release their moisture and become tender, about 5 minutes.
  4. Stir in the flour and cook for 1-2 minutes, then gradually whisk in the heavy cream and white wine. Bring to a simmer and cook until the sauce thickens, about 5 minutes.
  5. Stir in the chopped lobster meat, Dijon mustard, paprika, salt, and pepper. Mix well and remove from heat.
  6. Preheat your oven to 375°F. Spoon the lobster mixture back into the reserved shells and place them on a baking dish. Sprinkle the Gruyère cheese evenly over the top of each filled shell.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool slightly. Garnish with fresh parsley and serve with lemon wedges.

  • For a spicier kick, add a pinch of cayenne pepper to the lobster mixture.
