  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt until well combined.
  3. In another bowl, mix the vegetable oil, buttermilk, eggs, lime juice, lime zest, vanilla extract, and green food coloring until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. While the cakes are cooling, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter together until creamy.
  8. Gradually add the powdered sugar, lime juice, and lime zest, mixing until smooth and fluffy.
  9. Once the cakes are completely cooled, place one layer on a serving plate and spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the cake.
  10. Chill the cake for at least 30 minutes before serving to set the frosting.
