- 1 cup plain yogurt
- 1 cup granulated sugar
- ½ cup vegetable oil

- 1 tablespoon lemon zest
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, combine the yogurt, granulated sugar, vegetable oil, eggs, vanilla extract, and lemon zest. Mix until smooth and well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Once cooled, dust with powdered sugar if desired before serving.
Notes
- For a richer flavor, try adding a teaspoon of almond extract in place of the vanilla.
- You can also incorporate fresh berries into the batter for a fruity twist.
- For a lighter version, substitute half of the oil with unsweetened applesauce.
