- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups low-sodium chicken broth
- 2 cups cooked turkey, shredded
- 1 cup uncooked long-grain white rice
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Juice of 1 large lemon
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- Add the shredded turkey, uncooked rice, thyme, oregano, salt, and pepper. Reduce the heat to a simmer and cook for about 20 minutes, or until the rice is tender.
- Stir in the lemon juice and zest. Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
Notes
- For a creamier soup, stir in 1/2 cup of heavy cream just before serving.
- You can substitute quinoa for rice for a gluten-free option.
