Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced

  • 8 cups low-sodium chicken broth
  • 2 cups cooked turkey, shredded
  • 1 cup uncooked long-grain white rice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the shredded turkey, uncooked rice, thyme, oregano, salt, and pepper. Reduce the heat to a simmer and cook for about 20 minutes, or until the rice is tender.
  5. Stir in the lemon juice and zest. Taste and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For a creamier soup, stir in 1/2 cup of heavy cream just before serving.
