A refreshing twist on the classic tiramisu, this Lemon Tiramisu combines the rich flavors of mascarpone with the zesty brightness of lemon, making it a perfect dessert for any occasion.


Ingredients

  • 2 cups heavy cream
  • 1 cup mascarpone cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh lemon juice (about 45 lemons)
  • 1 tablespoon lemon zest
  • 1 cup strong brewed coffee, cooled
  • 24 ladyfinger cookies
  • Cocoa powder, for dusting

Instructions

  1. In a large mixing bowl, whip the heavy cream until soft peaks form.
  2. In another bowl, combine the mascarpone cheese, powdered sugar, vanilla extract, lemon juice, and lemon zest. Mix until smooth and well combined.
  3. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
  4. Quickly dip each ladyfinger into the cooled coffee, making sure not to soak them.
  5. In a 9×9-inch baking dish, layer half of the dipped ladyfingers on the bottom.
  6. Spread half of the lemon mascarpone mixture over the ladyfingers.
  7. Repeat with another layer of dipped ladyfingers and the remaining lemon mascarpone mixture.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  9. Before serving, dust the top with cocoa powder.

Notes

  • For a lighter version, substitute half of the heavy cream with Greek yogurt.
  • For added texture, fold in crushed lemon cookies or shortbread into the mascarpone mixture before layering.
