  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 lemon, zested and juiced
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise (for tartar sauce)
  • 2 tablespoons dill pickles, finely chopped (for tartar sauce)
  • 1 tablespoon capers, rinsed and chopped (for tartar sauce)
  • 1 teaspoon Dijon mustard (for tartar sauce)
  • 1 teaspoon lemon juice (for tartar sauce)
  • Salt and pepper, to taste (for tartar sauce)

Instructions

  1. In a shallow bowl, combine flour, garlic powder, onion powder, paprika, salt, and black pepper.
  2. In another bowl, beat the eggs until well combined.
  3. In a third bowl, mix breadcrumbs with fresh dill, lemon zest, and a pinch of salt.
  4. Dip each piece of fish first into the flour mixture, then into the beaten eggs, and finally coat with the breadcrumb mixture.
  5. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the fish bites in batches, frying until golden brown and cooked through, about 3-4 minutes per side.
  6. Remove the fish bites and place them on a paper towel-lined plate to drain excess oil.
  7. For the creamy tartar sauce, combine mayonnaise, chopped dill pickles, capers, Dijon mustard, lemon juice, salt, and pepper in a small bowl. Mix well.
  8. Serve the fish bites hot with the creamy tartar sauce on the side.

Notes

  • For a healthier option, bake the fish bites at 400°F for 15-20 minutes, flipping halfway through, until golden and cooked through.
