  • 1 tablespoon lime zest
  • 1 cup chilled heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the crushed digestive biscuits, melted coconut oil, and brown sugar. Stir until the mixture resembles wet sand.
  3. Firmly press this blend into the base of a 9-inch springform pan to create a sturdy crust.
  4. Bake for 10 minutes, then set aside to cool completely.
  5. In another large bowl, use an electric mixer to whip the mascarpone cheese until it’s velvety and smooth.
  6. Gradually incorporate the icing sugar, mixing until fully blended.
  7. Add the almond extract, lime juice, and lime zest to the mascarpone mixture. Continue mixing until everything is well combined and creamy.
  8. In a separate bowl, whip the chilled heavy cream until it forms stiff peaks.

  11. Cover the cheesecake and refrigerate for a minimum of 4 hours, or ideally overnight, to allow it to set properly.
