- 1 cup icing sugar

- 1 tablespoon lime zest
- 1 cup chilled heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the crushed digestive biscuits, melted coconut oil, and brown sugar. Stir until the mixture resembles wet sand.
- Firmly press this blend into the base of a 9-inch springform pan to create a sturdy crust.
- Bake for 10 minutes, then set aside to cool completely.
- In another large bowl, use an electric mixer to whip the mascarpone cheese until it’s velvety and smooth.
- Gradually incorporate the icing sugar, mixing until fully blended.
- Add the almond extract, lime juice, and lime zest to the mascarpone mixture. Continue mixing until everything is well combined and creamy.
- In a separate bowl, whip the chilled heavy cream until it forms stiff peaks.
- Carefully fold the whipped cream into the mascarpone mixture, ensuring it remains light and airy.
- Pour the cheesecake filling over the cooled biscuit crust, using a spatula to evenly spread the top.
- Cover the cheesecake and refrigerate for a minimum of 4 hours, or ideally overnight, to allow it to set properly.
- After chilling, carefully remove the cheesecake from the springform pan. Cut into slices and serve chilled.
