A flavorful Mediterranean seafood stew that combines various seafood with aromatic spices and vegetables.

- 1 large onion, diced
- 3 cloves garlic, minced
- 1 medium bulb of fennel, diced
- 1 red bell pepper, diced
- 1 teaspoon saffron strands
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 can (14.5 ounces) crushed tomatoes, with juices
- 4 cups seafood stock
- 1 cup dry white wine
- 1 pound firm white fish fillets (like snapper or tilapia), cut into bite-sized pieces
- 1 pound large shrimp, peeled and deveined
- 1/2 pound cleaned mussels
- 1/2 pound cleaned clams
- Salt and freshly ground black pepper to taste
- Chopped fresh basil or parsley (for garnish)
- Lemon wedges (for serving)
Instructions
- Heat the olive oil in a large heavy-bottomed pot over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic, fennel, and red bell pepper. Cook for another 5 minutes until the vegetables soften.
- Sprinkle in the saffron, oregano, smoked paprika, and cayenne pepper, stirring for about a minute to release the spices’ aromas.
- Pour in the crushed tomatoes with their juices, seafood stock, and white wine. Bring to a gentle boil, then reduce heat and simmer for approximately 10 minutes.
- Add the fish pieces, shrimp, mussels, and clams to the pot. Cover and simmer for an additional 5-7 minutes, or until the shellfish have opened and the fish is fully cooked. Discard any shellfish that remain closed.
- Taste and adjust seasoning with salt and freshly ground black pepper as needed.
- Ladle the stew into bowls, garnish with fresh basil or parsley, and serve with lemon wedges on the side.
Notes
- Feel free to adjust the types of seafood based on availability.
- For a spicier kick, increase the amount of cayenne pepper.
- This dish pairs well with crusty bread for dipping.
