Description
A creamy and nutty overnight oats recipe inspired by the traditional Indian dessert, Kulfi.
Ingredients
Scale
- 1 cup rolled oats
- 1 ½ cups milk (dairy or non-dairy)
- ½ cup plain Greek yogurt
- ¼ cup sweetened condensed milk
- 1 teaspoon vanilla extract
- ½ teaspoon ground cardamom
- ¼ cup chopped pistachios
- ¼ cup chopped almonds
- 2 tablespoons shredded coconut
- 1 tablespoon honey (optional, for extra sweetness)
Instructions
- In a large mixing bowl, combine the rolled oats, milk, Greek yogurt, sweetened condensed milk, vanilla extract, and ground cardamom. Stir well until all ingredients are fully combined.
- Fold in the chopped pistachios, chopped almonds, and shredded coconut. If you prefer a sweeter taste, add honey to the mixture and stir until incorporated.
- Divide the mixture evenly into four jars or containers with lids.
- Seal the jars and refrigerate overnight (or for at least 6 hours) to allow the oats to absorb the liquid and flavors.
- In the morning, give the oats a good stir and enjoy cold, or you can warm them up in the microwave for a minute if you prefer them warm.
Notes
- For a fruity twist, add diced mango or chopped strawberries on top before serving.
- Substitute the nuts with your favorite mix-ins like walnuts or pecans for a different flavor profile.
