- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 4 large egg yolks
- 1 can (14 ounces) sweetened condensed milk
- ½ cup fresh key lime juice (about 10–12 key limes)
- 1 teaspoon lime zest
- 4 large egg whites
- ¼ teaspoon cream of tartar
- ½ cup granulated sugar (for meringue)
Instructions
- Preheat the oven to 350°F.
- In a medium bowl, combine graham cracker crumbs, ½ cup sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.
- In a large mixing bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth. Pour the filling into the cooled crust.
- Bake the pie for an additional 10-12 minutes until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours.
- While the pie is chilling, prepare the meringue. In a clean mixing bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.
- Gradually add ½ cup sugar, continuing to beat until stiff peaks form and the mixture is glossy.
- Spread the meringue over the chilled pie, making sure to seal the edges to prevent shrinking. Use a spatula to create peaks and swirls in the meringue.
- Bake the pie again at 350°F for 8-10 minutes until the meringue is lightly browned. Remove from the oven and let cool before serving.
Notes
- For a more intense lime flavor, add an extra tablespoon of lime zest to the filling.
- If you prefer a sweeter meringue, increase the sugar to ¾ cup.
