  • ½ cup fresh key lime juice (about 1012 key limes)
  • 1 teaspoon lime zest
  • 4 large egg whites
  • ¼ teaspoon cream of tartar
  • ½ cup granulated sugar (for meringue)

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine graham cracker crumbs, ½ cup sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.
  4. In a large mixing bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth. Pour the filling into the cooled crust.
  5. Bake the pie for an additional 10-12 minutes until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours.
  6. While the pie is chilling, prepare the meringue. In a clean mixing bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.
  7. Gradually add ½ cup sugar, continuing to beat until stiff peaks form and the mixture is glossy.
  8. Spread the meringue over the chilled pie, making sure to seal the edges to prevent shrinking. Use a spatula to create peaks and swirls in the meringue.
  9. Bake the pie again at 350°F for 8-10 minutes until the meringue is lightly browned. Remove from the oven and let cool before serving.

Notes

  • For a more intense lime flavor, add an extra tablespoon of lime zest to the filling.
  • If you prefer a sweeter meringue, increase the sugar to ¾ cup.
