- 1 pound ground turkey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 4 large eggs
- 1 ripe avocado, sliced
- Fresh cilantro or parsley for garnish (optional)
Instructions
- In a large bowl, combine the ground turkey, garlic powder, onion powder, oregano, paprika, black pepper, and salt. Mix well until all ingredients are evenly incorporated.
- Form the turkey mixture into 8 equal-sized patties.
- Heat olive oil in a large skillet over medium heat. Once hot, add the turkey patties and cook for about 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F).
- While the patties are cooking, in a separate non-stick skillet, cook the eggs to your preference (scrambled, fried, or poached).
- To serve, place two turkey sausage patties on each plate, top with two eggs, and add slices of avocado. Garnish with fresh cilantro or parsley if desired.
Notes
- For added flavor, mix in some chopped fresh herbs like basil or thyme into the turkey mixture.
- If you prefer a spicier kick, add a pinch of red pepper flakes or some chopped jalapeños to the turkey mixture.
