Kenyan Goat Wet Fry is a flavorful dish made with tender goat meat, spices, and a rich sauce, perfect for serving with ugali, rice, or chapati.

- 2 pounds goat meat, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 large tomatoes, chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 1–2 green chilies, sliced (optional, for heat)
- 1 cup water
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they are translucent, about 5 minutes.
- Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.
- Add the goat meat to the pot, browning it on all sides for about 10 minutes.
- Incorporate the chopped tomatoes, ground coriander, cumin, paprika, turmeric, black pepper, and salt. Stir well to combine all the spices with the meat.
- If using, add the sliced green chilies for extra heat.
- Pour in the water, bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the goat meat is tender. Stir occasionally and add more water if necessary to prevent sticking.
- Once the meat is tender, uncover the pot and let it simmer for an additional 10-15 minutes to thicken the sauce.
- Garnish with fresh cilantro before serving.

- For a richer flavor, marinate the goat meat in yogurt and spices for a few hours or overnight before cooking.
- Serve with ugali, rice, or chapati for a complete meal, and add a side of sautéed greens for extra nutrition.
