  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 large tomatoes, chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 12 green chilies, sliced (optional, for heat)
  • 1 cup water
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they are translucent, about 5 minutes.
  2. Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.
  3. Add the goat meat to the pot, browning it on all sides for about 10 minutes.
  4. Incorporate the chopped tomatoes, ground coriander, cumin, paprika, turmeric, black pepper, and salt. Stir well to combine all the spices with the meat.
  5. If using, add the sliced green chilies for extra heat.
  6. Pour in the water, bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the goat meat is tender. Stir occasionally and add more water if necessary to prevent sticking.
  7. Once the meat is tender, uncover the pot and let it simmer for an additional 10-15 minutes to thicken the sauce.
  8. Garnish with fresh cilantro before serving.
