Ingredients

  • 2 large bone-in pork chops (about 1.5 inches thick)
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 375°F.
  2. Using a sharp knife, carefully cut a pocket into each pork chop, making sure not to cut all the way through. Season the inside and outside of the chops with salt and pepper.
  3. In a medium bowl, combine the chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, and Italian seasoning. Mix until well combined.
  4. Stuff each pork chop with the cheese and spinach mixture, pressing down gently to ensure the filling is secure.
  5. In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed pork chops and sear for about 3-4 minutes on each side until golden brown.
  6. Pour the chicken broth into the skillet around the chops, then transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the internal temperature of the pork reaches 145°F.
  7. Remove from the oven and let the chops rest for 5 minutes before serving.

Notes

  • For a twist, try adding chopped sun-dried tomatoes or artichoke hearts to the stuffing mixture.
  • You can also substitute the spinach with kale or Swiss chard for a different flavor profile.
