A delicious recipe for juicy stuffed pork chops filled with a creamy spinach and cheese mixture.

- 2 large bone-in pork chops (about 1.5 inches thick)
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup chicken broth
Instructions
- Preheat your oven to 375°F.
- Using a sharp knife, carefully cut a pocket into each pork chop, making sure not to cut all the way through. Season the inside and outside of the chops with salt and pepper.
- In a medium bowl, combine the chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, and Italian seasoning. Mix until well combined.
- Stuff each pork chop with the cheese and spinach mixture, pressing down gently to ensure the filling is secure.
- In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed pork chops and sear for about 3-4 minutes on each side until golden brown.
- Pour the chicken broth into the skillet around the chops, then transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the internal temperature of the pork reaches 145°F.
- Remove from the oven and let the chops rest for 5 minutes before serving.
Notes
- For a twist, try adding chopped sun-dried tomatoes or artichoke hearts to the stuffing mixture.
- You can also substitute the spinach with kale or Swiss chard for a different flavor profile.
