  • 2 pounds bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 lemon, juiced and zested
  • 1 pound fresh green beans, trimmed
  • 1/4 cup chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, paprika, thyme, and red pepper flakes. Once the oil is hot, add the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and cook for another 5 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the lemon juice and zest, followed by the chicken broth. Bring to a simmer.
  4. Add the green beans to the skillet, stirring to coat them in the lemon garlic butter sauce. Nestle the chicken thighs back into the skillet, skin-side up.
  5. Cover the skillet and let everything simmer for about 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the green beans are tender.
  6. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For a crispy skin, broil the chicken thighs for an additional 2-3 minutes after cooking.
  • Feel free to substitute the green beans with asparagus or broccoli for a different vegetable option.
