- 2 pounds bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (optional)
- 1 lemon, juiced and zested
- 1 pound fresh green beans, trimmed
- 1/4 cup chicken broth
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, paprika, thyme, and red pepper flakes. Once the oil is hot, add the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and cook for another 5 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the lemon juice and zest, followed by the chicken broth. Bring to a simmer.
- Add the green beans to the skillet, stirring to coat them in the lemon garlic butter sauce. Nestle the chicken thighs back into the skillet, skin-side up.
- Cover the skillet and let everything simmer for about 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the green beans are tender.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For a crispy skin, broil the chicken thighs for an additional 2-3 minutes after cooking.
- Feel free to substitute the green beans with asparagus or broccoli for a different vegetable option.
