Instructions
- Begin by boiling a pot of salted water and cook the linguine or spaghetti until it reaches an al dente texture. Drain the pasta, reserving half a cup of the cooking water, and set it aside.

- Introduce the shrimp to the skillet, cooking them until they are pink and opaque, roughly 3-4 minutes.
- Pour in the coconut milk and allow it to come to a gentle simmer. Add the halved cherry tomatoes and lime juice, mixing everything well. Let the mixture simmer for an additional 2-3 minutes to meld the flavors.
- Combine the cooked pasta with the shrimp mixture, adding the reserved pasta water gradually to achieve a creamy consistency. Season with salt and pepper to your liking.
- Serve hot, garnished with a sprinkle of fresh cilantro or parsley for a burst of color and flavor.
