Description

A tropical and flavorful Jamaican Shrimp Pasta dish featuring linguine, shrimp, and a creamy coconut sauce.

Ingredients

Scale
  • 8 ounces linguine or spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons extra virgin olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (red or green)
  • 1 teaspoon Jamaican jerk spice blend
  • 1 cup coconut milk
  • 1 cup halved cherry tomatoes
  • 1 tablespoon fresh lime juice
  • Salt and freshly ground black pepper to taste
  • Chopped fresh cilantro or parsley for garnish

Instructions

  1. Begin by boiling a pot of salted water and cook the linguine or spaghetti until it reaches an al dente texture. Drain the pasta, reserving half a cup of the cooking water, and set it aside.
  2. In a large skillet, warm the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until they soften, which should take about 3-4 minutes.
  3. Next, incorporate the minced garlic and jerk spice blend, stirring for about a minute until the mixture becomes aromatic.
  4. Introduce the shrimp to the skillet, cooking them until they are pink and opaque, roughly 3-4 minutes.
  5. Pour in the coconut milk and allow it to come to a gentle simmer. Add the halved cherry tomatoes and lime juice, mixing everything well. Let the mixture simmer for an additional 2-3 minutes to meld the flavors.
  6. Combine the cooked pasta with the shrimp mixture, adding the reserved pasta water gradually to achieve a creamy consistency. Season with salt and pepper to your liking.
  7. Serve hot, garnished with a sprinkle of fresh cilantro or parsley for a burst of color and flavor.

Notes

  • For an extra kick, consider adding sliced jalapeños or a splash of your favorite hot sauce.
  • Feel free to swap the shrimp for chicken or tofu if you prefer a different protein source.
