- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 16 ounces cream cheese, softened
- 1 cup ricotta cheese
- 3/4 cup powdered sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup mini chocolate chips
- 1/4 cup chopped pistachios (optional)
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
- In a large mixing bowl, beat the cream cheese and ricotta cheese together until smooth and creamy. Add the powdered sugar, eggs, vanilla extract, and almond extract. Mix until fully combined and smooth.
- Gently fold in the mini chocolate chips and chopped pistachios, if using.
- Pour the cheesecake mixture over the prepared crust and spread it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or until fully chilled and set.
- Once chilled, dust the top with powdered sugar before cutting into bars. Serve cold.

- For a chocolate twist, use chocolate graham crackers for the crust.
