Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup heavy cream
  • 1 cup milk chocolate chips
  • 1 cup vanilla pudding mix
  • 2 cups milk

Instructions

  1. Preheat your oven to 325°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press the mixture firmly into the bottom of the prepared pan to form the crust.
  3. Bake for 10 minutes, then remove from the oven and let it cool.
  4. In a large mixing bowl, beat the softened cream cheese and 1 cup of sugar together until smooth and creamy. Add the vanilla extract and mix well.
  5. Add the eggs one at a time, mixing on low speed until just combined after each addition. Stir in the sour cream until fully incorporated.
  6. Pour the cream cheese mixture over the cooled crust in the springform pan.
  7. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside for 1 hour.
  9. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  10. In a medium saucepan, combine the milk and vanilla pudding mix. Cook over medium heat, stirring constantly until thickened. Remove from heat and let it cool slightly.
  11. In a separate bowl, melt the milk chocolate chips in the microwave or over a double boiler until smooth.
  12. Once the cheesecake is chilled, spread the vanilla pudding evenly over the top. Drizzle the melted chocolate over the pudding layer.
  13. For best results, chill for an additional 30 minutes before serving.
