- 4 (6-ounce) salmon fillets
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté the minced garlic for about 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
- In a baking dish, place the salmon fillets skin-side down. Season with salt, pepper, and dried oregano.
- Spoon the sautéed spinach evenly over each salmon fillet.
- Top each fillet with shredded mozzarella cheese.
- Drizzle lemon juice over the cheese and salmon.
- Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the cheese is bubbly and golden.
- Serve hot with lemon wedges on the side.
Notes
- For added flavor, sprinkle some crushed red pepper flakes over the cheese before baking for a spicy kick.
- Substitute the mozzarella with feta cheese for a tangy twist, or add sliced tomatoes on top for extra freshness.
