  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the cubed red potatoes and diced bell pepper to the pot, stirring to combine.
  4. Sprinkle in the sweet paprika, caraway seeds, and dried thyme, mixing well to coat the vegetables.
  5. Pour in the diced tomatoes with their juice and the vegetable broth. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the potatoes are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh chopped parsley.
