- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound red potatoes, cut into 1-inch cubes
- 1 bell pepper, diced (red or green)
- 1 tablespoon sweet paprika
- 1 teaspoon caraway seeds
- 1 teaspoon dried thyme
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the cubed red potatoes and diced bell pepper to the pot, stirring to combine.
- Sprinkle in the sweet paprika, caraway seeds, and dried thyme, mixing well to coat the vegetables.
- Pour in the diced tomatoes with their juice and the vegetable broth. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh chopped parsley.
Notes
- For a heartier version, add cooked sausage or ground beef to the pot along with the onions.
- Substitute sweet potatoes for red potatoes for a different flavor and added nutrition.
