Ingredients

  • 2 ripe bananas
  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup granulated sugar
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut (unsweetened or sweetened, as preferred)
  • 1/4 cup chopped nuts (such as peanuts or almonds, optional)
  • 1 tablespoon cornstarch (for dusting)

Instructions

  1. In a mixing bowl, mash the ripe bananas until smooth. Set aside.
  2. In a separate bowl, combine the sweet rice flour, granulated sugar, and salt. Gradually add the water while stirring until you have a smooth batter.
  3. Fold the mashed bananas into the batter until well combined.
  4. Pour the mixture into a microwave-safe dish, spreading it evenly.
  5. Cover the dish with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 2-3 minutes, or until the mochi is firm and slightly translucent. Check after 2 minutes and continue microwaving in 30-second intervals if needed.
  6. Carefully remove the dish from the microwave and let it cool for a few minutes.
  7. Dust a clean surface with cornstarch. Transfer the mochi onto the surface and sprinkle more cornstarch on top to prevent sticking.
  8. Roll the mochi out into a rectangle about 1/4 inch thick. Cut into strips about 2 inches wide.
  9. Place a few pieces of shredded coconut and chopped nuts (if using) along one edge of each strip. Roll the mochi tightly around the filling.
  10. Repeat with the remaining strips and filling. Serve immediately or refrigerate for later.

Notes

  • For a chocolate twist, add cocoa powder to the mochi batter or drizzle melted chocolate over the finished rolls.
