Description
Hong Kong Banana Mochi Rolls are a delightful treat made with ripe bananas and sweet rice flour, rolled with coconut and nuts for a delicious dessert.
Ingredients
Scale
- 2 ripe bananas
- 1 cup sweet rice flour (mochi flour)
- 1/4 cup granulated sugar
- 1/2 cup water
- 1/4 teaspoon salt
- 1/2 cup shredded coconut (unsweetened or sweetened, as preferred)
- 1/4 cup chopped nuts (such as peanuts or almonds, optional)
- 1 tablespoon cornstarch (for dusting)
Instructions
- In a mixing bowl, mash the ripe bananas until smooth. Set aside.
- In a separate bowl, combine the sweet rice flour, granulated sugar, and salt. Gradually add the water while stirring until you have a smooth batter.
- Fold the mashed bananas into the batter until well combined.
- Pour the mixture into a microwave-safe dish, spreading it evenly.
- Cover the dish with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 2-3 minutes, or until the mochi is firm and slightly translucent. Check after 2 minutes and continue microwaving in 30-second intervals if needed.
- Carefully remove the dish from the microwave and let it cool for a few minutes.
- Dust a clean surface with cornstarch. Transfer the mochi onto the surface and sprinkle more cornstarch on top to prevent sticking.
- Roll the mochi out into a rectangle about 1/4 inch thick. Cut into strips about 2 inches wide.
- Place a few pieces of shredded coconut and chopped nuts (if using) along one edge of each strip. Roll the mochi tightly around the filling.
- Repeat with the remaining strips and filling. Serve immediately or refrigerate for later.
Notes
- For a chocolate twist, add cocoa powder to the mochi batter or drizzle melted chocolate over the finished rolls.
- Experiment with different fillings such as Nutella, peanut butter, or diced strawberries for a fruity variation.
