Description

Honey Pineapple Salmon is a sweet and flavorful dish that combines the richness of salmon with a delicious pineapple and honey marinade.


Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 cup fresh pineapple, diced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Preheat your grill or oven to 400°F (200°C). If using a grill, lightly oil the grates to prevent sticking.
  2. In a medium bowl, combine the diced pineapple, honey, soy sauce, olive oil, minced garlic, ground ginger, salt, and pepper. Mix well to create the marinade.
  3. Place the salmon fillets in a shallow dish and pour half of the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. Reserve the other half of the marinade for basting and serving.
  5. If grilling, place the salmon fillets skin-side down on the grill and cook for about 6-8 minutes, basting with the reserved marinade halfway through. If baking, place the salmon on a lined baking sheet and bake for 12-15 minutes, or until the salmon flakes easily with a fork.
  6. Once cooked, remove the salmon from the heat and let it rest for a few minutes.
  7. Serve the salmon with the remaining pineapple mixture spooned over the top and lime wedges on the side.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the marinade.
  • Serve with a side of steamed vegetables or rice for a complete meal.
