Savory Maple-Glazed Salmon Nuggets served with a Zesty Ginger Dip.


Ingredients

  • 1/4 cup pure maple syrup
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon avocado oil
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon sea salt
  • 1/2 cup creamy yogurt
  • 1 tablespoon finely grated fresh ginger
  • 1 teaspoon lime juice
  • 1 teaspoon maple syrup

Instructions

  1. Preheat your oven to 400°F and line a baking tray with aluminum foil.
  2. In a large mixing bowl, combine the maple syrup, tamari, avocado oil, onion powder, black pepper, and sea salt.
  3. Add the diced salmon and gently mix until each piece is thoroughly coated. Allow to marinate for about 15 minutes.
  4. Arrange the marinated salmon pieces on the prepared baking tray in a single layer.
  5. Bake in the preheated oven for 12-15 minutes, or until the salmon is tender and flakes easily.
  6. While the salmon is baking, prepare the Zesty Ginger Dip by whisking together the yogurt, grated ginger, lime juice, and maple syrup until smooth.
  7. Once the salmon nuggets are finished baking, let them rest for a few minutes.
  8. Serve warm alongside the Zesty Ginger Dip.
