Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper (adjust for spice preference)
  • 1/2 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons chipotle in adobo sauce, minced
  • 1/2 cup beef broth
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup crumbled queso fresco
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Season the beef chuck roast with salt, black pepper, garlic powder, onion powder, smoked paprika, cumin, and cayenne pepper. Sear the roast on all sides until browned, about 3-4 minutes per side.
  2. In a slow cooker, combine the honey, apple cider vinegar, soy sauce, chipotle in adobo sauce, and beef broth. Stir until well mixed.
  3. Place the seared beef roast into the slow cooker, ensuring it is submerged in the sauce. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender and easily shredded.
  4. Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix it with the sauce. Let it sit for an additional 15 minutes to absorb the flavors.
  5. Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable.
  6. Assemble the tacos by placing a generous amount of shredded beef on each tortilla. Top with shredded lettuce, diced tomatoes, queso fresco, and cilantro. Serve with lime wedges on the side.

Notes

  • For a spicier kick, add sliced jalapeños on top of the tacos.
  • To make it a complete meal, serve with a side of Mexican rice or black beans.
