- 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/4 cup honey
- 1/4 cup extra virgin olive oil
- 2 tablespoons minced chipotle peppers in adobo sauce
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, finely chopped
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- Wooden or metal skewers
Instructions
- Combine honey, olive oil, minced chipotle peppers, apple cider vinegar, chopped garlic, smoked paprika, cumin, sea salt, and black pepper in a mixing bowl. Stir until well blended.
- Add chicken pieces to the marinade, ensuring each piece is coated. Cover and marinate in the refrigerator for at least 1 hour, or up to 4 hours.
- If using wooden skewers, soak them in water for about 30 minutes.
- Preheat the grill to medium-high temperature.
- Thread marinated chicken onto skewers, leaving small gaps between pieces.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and reaches an internal temperature of 165°F.
- Remove from grill and let rest for 5 minutes before serving.
Notes
- For extra flavor, marinate the chicken overnight.
- Substitute chicken with shrimp or firm tofu for a different variation.
- Pair with grilled vegetables or a crisp salad for a complete meal.
