Description

A delicious and easy-to-make Honey Balsamic Chicken with Brussels Sprouts recipe that combines tender chicken thighs with roasted Brussels sprouts, all coated in a sweet and tangy marinade.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together honey, balsamic vinegar, olive oil, minced garlic, thyme, salt, and black pepper.
  3. Add the chicken thighs to the bowl and toss to coat them evenly in the marinade. Let it marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. While the chicken is marinating, prepare the Brussels sprouts. In a separate bowl, toss the halved Brussels sprouts with a drizzle of olive oil, salt, and pepper.
  5. Arrange the marinated chicken thighs on a baking sheet lined with parchment paper. Scatter the Brussels sprouts around the chicken.
  6. Pour any remaining marinade over the chicken and Brussels sprouts.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Optional: Broil for an additional 2-3 minutes for a caramelized finish.
  9. Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the marinade.
  • Substitute chicken thighs with chicken breasts for a leaner option, adjusting the cooking time as needed.
