Description

A comforting and flavorful homemade French onion pot roast, perfect for family dinners.


Ingredients

Scale
  • 2 to 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry red wine (or additional beef broth)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 slices provolone cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it in the hot oil for about 4-5 minutes on each side until browned. Remove the roast and set aside.
  3. In the same pot, add the sliced onions and cook, stirring occasionally, for about 10-15 minutes until they are caramelized and golden brown. Add the minced garlic and cook for an additional minute.
  4. Pour in the beef broth, red wine, and Worcestershire sauce, scraping up any browned bits from the bottom of the pot. Stir in the thyme and rosemary.
  5. Return the seared roast to the pot, cover with a lid, and transfer to the preheated oven. Cook for 3 to 4 hours, or until the meat is tender and easily shreds with a fork.
  6. About 10 minutes before serving, remove the pot from the oven, place the provolone cheese slices on top of the roast, and return it to the oven uncovered until the cheese is melted and bubbly.
  7. Remove from the oven, let it rest for a few minutes, then slice or shred the roast. Serve with the caramelized onions and broth, garnished with fresh parsley.

Notes

  • For a richer flavor, add a tablespoon of balsamic vinegar to the broth mixture before cooking.
  • Serve the pot roast over mashed potatoes or egg noodles for a heartier meal.
