Description

A delicious and juicy chicken recipe that is perfect for grilling, featuring a flavorful marinade with lime, garlic, and spices.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 2 limes)
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, black pepper, and cayenne pepper (if using) until well combined.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and discard the leftover marinade.
  5. Grill the chicken thighs for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
  7. Serve the chicken garnished with fresh cilantro and lime wedges on the side.

Notes

  • For a smoky flavor, try adding a few drops of liquid smoke to the marinade.
  • Serve the chicken in tacos with your favorite toppings like avocado, salsa, and shredded cheese for a delicious twist.
