Description
A delicious and juicy chicken recipe that is perfect for grilling, featuring a flavorful marinade with lime, garlic, and spices.
Ingredients
Scale
- 2 pounds boneless, skinless chicken thighs
- 1/4 cup olive oil
- 1/4 cup fresh lime juice (about 2 limes)
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional for heat)
- 1/4 cup fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- In a large bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, black pepper, and cayenne pepper (if using) until well combined.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor.
- Preheat your grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and discard the leftover marinade.
- Grill the chicken thighs for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve the chicken garnished with fresh cilantro and lime wedges on the side.
Notes
- For a smoky flavor, try adding a few drops of liquid smoke to the marinade.
- Serve the chicken in tacos with your favorite toppings like avocado, salsa, and shredded cheese for a delicious twist.
