  • 1 cup chopped pecans or walnuts
  • 1 can (20 ounces) crushed pineapple, drained
  • 1 cup whipped topping (like Cool Whip)
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  3. Add the softened butter, milk, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until well combined.
  4. Gently fold in the shredded coconut and chopped nuts.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan on a wire rack.
