- 1 can (20 ounces) crushed pineapple, drained
- 1 cup whipped topping (like Cool Whip)
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
- Add the softened butter, milk, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until well combined.
- Gently fold in the shredded coconut and chopped nuts.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan on a wire rack.
- Once cooled, spread the crushed pineapple evenly over the top of the cake.
- In a separate bowl, mix the whipped topping and mini marshmallows together. Spread this mixture over the pineapple layer.
- Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld.
