- 2 pounds bone-in, skin-on chicken thighs
- 1 cup soy sauce
- 1 cup brown sugar
- 1/2 cup pineapple juice
- 1/4 cup rice vinegar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon black pepper
- 1/2 teaspoon sesame oil
- 1/4 cup green onions, sliced (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- In a large bowl, whisk together the soy sauce, brown sugar, pineapple juice, rice vinegar, garlic, ginger, black pepper, and sesame oil until the sugar is dissolved.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for better flavor.
- Preheat your oven to 375°F (190°C).
- Place the marinated chicken thighs in a baking dish, pouring the remaining marinade over the top.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- For a caramelized finish, broil the chicken for an additional 2-3 minutes, watching closely to avoid burning.
- Remove from the oven and let rest for 5 minutes. Garnish with sliced green onions and sesame seeds before serving.
Notes
- For a spicier kick, add 1-2 teaspoons of red pepper flakes to the marinade.
- Serve with steamed rice and a side of sautéed vegetables for a complete meal.
