Hawaiian Shoyu Chicken is a flavorful dish made with marinated chicken thighs, soy sauce, and pineapple juice, baked to perfection.


Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup soy sauce
  • 1 cup brown sugar
  • 1/2 cup pineapple juice
  • 1/4 cup rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon black pepper
  • 1/2 teaspoon sesame oil
  • 1/4 cup green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. In a large bowl, whisk together the soy sauce, brown sugar, pineapple juice, rice vinegar, garlic, ginger, black pepper, and sesame oil until the sugar is dissolved.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for better flavor.
  3. Preheat your oven to 375°F (190°C).
  4. Place the marinated chicken thighs in a baking dish, pouring the remaining marinade over the top.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  6. For a caramelized finish, broil the chicken for an additional 2-3 minutes, watching closely to avoid burning.
  7. Remove from the oven and let rest for 5 minutes. Garnish with sliced green onions and sesame seeds before serving.
