- 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine the drained crushed pineapple, shredded coconut, mini marshmallows, whipped topping, sour cream, lime juice, and vanilla extract.
- Gently fold the ingredients together until well combined, being careful not to deflate the whipped topping.
- If using, fold in the chopped pecans for added crunch.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the mixture to chill.
- Serve chilled, garnished with additional coconut or lime zest if desired.
