- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup fresh pineapple, cut into 1-inch chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into wedges
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- Wooden or metal skewers
Instructions
- In a bowl, whisk together soy sauce, honey, olive oil, minced garlic, ground ginger, and black pepper to create the marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken, pineapple, bell peppers, and onion onto the skewers, alternating between the ingredients.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
Notes
- For a spicy kick, add sliced jalapeños or brush the kabobs with sriracha before grilling.
- You can substitute shrimp or tofu for the chicken for a different protein option.
