  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple, cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together soy sauce, honey, olive oil, minced garlic, ground ginger, and black pepper to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken, pineapple, bell peppers, and onion onto the skewers, alternating between the ingredients.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Remove from the grill and let rest for a few minutes before serving.
