Description

Hawaiian BBQ Chicken is a delicious grilled dish featuring tender chicken thighs marinated in a sweet and tangy barbecue sauce with pineapple juice, soy sauce, and spices.

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup barbecue sauce
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup diced fresh pineapple (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large bowl, whisk together the barbecue sauce, pineapple juice, soy sauce, brown sugar, minced garlic, ground ginger, black pepper, and red pepper flakes (if using).
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade.
  5. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  6. During the last few minutes of grilling, place the diced pineapple on the grill to caramelize slightly.
  7. Remove the chicken and grilled pineapple from the grill. Let the chicken rest for 5 minutes before slicing.
  8. Serve the sliced chicken topped with grilled pineapple and garnished with sliced green onions.
