- 2 pounds boneless, skinless chicken thighs
- 1 cup barbecue sauce
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup diced fresh pineapple (for garnish)
- 2 green onions, sliced (for garnish)
Instructions
- In a large bowl, whisk together the barbecue sauce, pineapple juice, soy sauce, brown sugar, minced garlic, ground ginger, black pepper, and red pepper flakes (if using).
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade.
- Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
- During the last few minutes of grilling, place the diced pineapple on the grill to caramelize slightly.
- Remove the chicken and grilled pineapple from the grill. Let the chicken rest for 5 minutes before slicing.
- Serve the sliced chicken topped with grilled pineapple and garnished with sliced green onions.

- For a smoky flavor, add a few drops of liquid smoke to the marinade.
- Substitute chicken thighs with chicken breasts for a leaner option, adjusting the cooking time as needed.
