- 4 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1 cup frozen peas (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the diced potatoes, beef broth, salt, pepper, and paprika. Bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.
- If using, add the frozen peas during the last 5 minutes of cooking.
- Once cooked, remove from heat and garnish with chopped parsley before serving.
