- 2 medium zucchini, sliced into 1/4-inch rounds
- 2 medium yellow squash, sliced into 1/4-inch rounds
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 red onion, cut into wedges
- 8 ounces mushrooms, halved
- 1/4 cup olive oil
- 2 teaspoons balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine the sliced zucchini, yellow squash, bell peppers, red onion, and mushrooms.
- In a separate small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, Italian herbs, salt, and pepper.
- Pour the olive oil mixture over the vegetables and toss until they are evenly coated.
- Place the vegetables in a grill basket or directly on the grill grates. Grill for about 10-15 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
- Remove from the grill and serve warm.

- For added flavor, sprinkle fresh herbs like parsley or basil over the grilled vegetables before serving.
